I was writing lines in iambic pentameter, and I came up with something to the effect of, "Those Oklahoma nights last mighty long / When your sweet thing's in someone else's arms." But I decided it was more interesting if the night lasted so long because the sweet thing was, instead of wasn't in your arms. I stole the progression in the chorus from a lovely old song called "The Waltz You Saved for Me," which I think I heard for the first time when Tuba Skinny did it at the Dragon's Den, though it's one of those songs that everyone's done. The arrangement evolved as I played it at solo acoustic gigs and then in rehearsals with Beau. Gradually, though there were never any additional verses, we cut away extraneous parts until it didn't repeat the chorus more than it needed to, and the first chorus is 15, instead of 16 bars.
